The Lee Brothers Cookbook has a recipe where you cook grits (slowly, with cream or at least some milk), then mix with bacon, cheddar, top with some more cheddar, and bake in the oven for a bit so the cheese gets browned and everything gets melty.

When you're up to meat again, I HIGHLY recommend it.
