Well, when Nobu 57 closes its reservation line at 5:00, there's not much anyone can do short of calling every 5 minutes and asking "hey, has there been a cancellation?"

And honestly we can't do that. We've already had to restructure how we contact a particular NYC trendaurant because we were calling 'em too many times a day.
