I think my favorite Tracy Jordan quote isn't one of the more outlandish I AM A STABBING ROBOT quotes (though that one is a keeper right there) but instead, something slightly less whacked-out but much more character-rich:
We've got more important things to worry about. Like where are those french fries I did not ask for? You guys need to anticipate me!
This isn't part of a running gag, there's no french fry storyline; Tracy just says it in the middle of an argument. It says a lot about a prima donna, and it's just a brilliant line all around.

Now my favorite overall 30 Rock moment, well, geez, I'd have to think hard about that.
